AS you may know this week is national Barbecue week here in the UK and the last few nights that’s exactly what Ive been doing, I of course cooked the usual fare of sausages and burgers but on Monday we had a bit of a fussy eater round who doesn’t eat red meat which forced me to be a little more creative than usual so I thought why not try some chicken?
I came across this excellent recipe for chicken burgers from cheese brand Leerdammer and it worked a treat so I thought I would share it with you
Ingredients
4 Small Chicken Breasts (skinless and boneless)
2 tbl spoons of HP BBQ sauce
Generous Pinch of chili flakes
Salt and pepper
4 seeded burger buns (split)
4 slices of Leerdammer toastie and burger cheese
mixed leaves, sliced tomatoes
red onion and dill pickle to serve
Method
1. Pre-heat the barbeque
2. put the chicken breast between two sheets of cling film, spaced apart, and use a rolling pin to beat them to an even thickness (helping them cook evenly). Place in a shallow dish adding the HP Sauce and chil flakes turning to coat them evenly. Season with salt and pepper.
3. Cook the chicken on the barbecue for 8-10mins turning once. Make sure the chicken is thoroughly cooked by testing the thickest part with a knife – the juices should run clear.
4. Toast the cut sides of the burger buns, top with the mixed leaves and tomatoes, arrange the chicken on top and place a slice of Leerdammer toastie and burger cheese onto each one. Finish off with sliced red onion and dill pickle.
One the Side
Make a sweetcorn relish with 100g of sweetcorn kernels 3 tbl spoons sweet chili sauce, 3 finely chopped spring onions and a little finely chopped cucumber.
